Nada's Braised Chicken Enchiladas

w/ green goddess bibb salad & Nada's salsa trio & chips

instructions

  • Step 1

    Preheat the oven to 425º & prepare to cook on the middle rack. While the oven is preheating, unpack all your "mise en place" (ingredients).

  • Step 2

    Remove foil & plastic cover. Place uncovered pan on a sheet tray on the middle rack & cook for 25-30 minutes. You know your oven best; cook time may vary, but you're looking for golden cheese & hot bubbling sauce.

  • Step 3

    When the enchiladas have about 10 minutes left to cook, remove the bibb lettuce from the container & place on a large plate. Cut as desired & garnish with green goddess dressing, pickled red onion, green onions, & ancho-crusted pepitas.

  • Step 4

    Remove enchiladas from the oven & garnish with crema, scallions, & Nada hot sauce.

    You've probably eaten all the chips & salsa already, but just in case:

    Mild = Fire-Roasted Tomato Ancho
    Medium = Smoked Chipotle Morita
    Spicy = Habanero Kreeper
