The Boca Burger
w/ compressed watermelon salad & Nada’s mac n’ cheese
SERVES 4 • GRILL/STOVE, OVEN • 50 MINUTES
Step 1Preheat oven to 350° & prepare to cook on the middle rack. While the oven is preheating, unpack all your mise en place (ingredients).
Step 2Remove the plastic lid & place the foil-covered pan of mac n’ cheese on a sheet tray in the oven for 25-35 minutes, or until heated through. You know your oven best; cook time may vary, but you're looking for bubbling edges. Halfway through the mac n’ cheese cook time, season your burger patties with a heavy pinch of salt & pepper on each side, then heat your grill to high heat (500º). If not using a grill, use the alternative Step 3 instructions for stovetop cooking.
Step 3 - Grill Instructions
Place patties on grill & DO NOT TOUCH until the meat is ready to be flipped. You want nice grill lines caused by the initial sear. Patties will release easily from grill when ready to be flipped. Do not press the patty. You know your grill best; cook times may vary, usually 2-5 minutes per side. With 1 minute left of cooking, add cheese. Let finished burgers rest for a few minutes before serving.
Step 3 - Stovetop Instructions
If using a stovetop, heat 1-2 tablespoons of oil in a pan over medium-high heat. Once the oil is hot, place burger patties in the pan & cook each side for 2-3 minutes, or until you reach your desired doneness. With 1 minute left of cooking, add cheese. Let finished burgers rest for a few minutes before serving.
Remove the mac n’ cheese & carefully remove the foil. Garnish with garlic breadcrumbs & let rest for 10 minutes.
Step 5While burgers are resting, layer the compressed watermelon on a serving dish or use the pan provided. Toss the baby greens in sherry vinaigrette & spread evenly over the top of the watermelon. Garnish the top of the salad with fiore sardo. Reheat mac n’ cheese for a few minutes before serving if necessary. Toast buns if desired & serve burgers with provided accoutrements, mac n’ cheese, & compressed watermelon salad.
